Ingredients
16cupspopped popcorn (about 1/2 cup unpopped popcorn kernals)
2cupswhite granulated sugar
2/3cupwhole milk or half & half
2tablespoonslight corn syrup
¼teaspoonsalt
1teaspoonvanilla
2 to 3small drops of red food coloring
Instructions
Set popcorn aside in a large mixing bowl. Prepare a baking pan by lining it parchment paper. Set aside.
In a saucepan combine sugar, 1/2 & 1/2 or milk, corn syrup and salt. Cook over medium heat, stirring constantly, until the sugar dissolves.
Reduce heat to medium low and continue to cook the ingredients. Stir periodically. Use a thermometer to monitor the temperature. When it reaches 230 degrees F (soft ball stage), turn off heat source and move pot to a cool burner or to a protected counter top. Stir in 2 drops of red food coloring and the vanilla.
Pour the pink mixture over the top of the popcorn and stir well to coat. Work quickly because this mixture sets up fast.
Pour the mixed popcorn out onto the baking sheet, spread around evenly, and allow to cool completely. Store covered.
