Chicken and Broccoli

Ingredients

Main Ingredients

  • 3 heads fresh broccoli, cut into bite-sized pieces
  • 1 teaspoon seasoning salt
  • 4 cups cooked chicken, shredded or cut into bite-sized pieces

For the Sauce

  • 2 cans (10.5 ounces) cream of mushroom soup
  • 1 cup mayonnaise light works well
  • 2 tablespoons lemon juice fresh or bottled will work
  • 1 cup grated sharp cheddar cheese about 4 ounces

Topping

  • 3/4 cup breadcrumbs, plain or panko
  • 2 tablespoons butter, melted

Instructions

  • Preheat oven to 375℉. Butter a 9" x 13" baking dish; set aside.

For the Broccoli and Chicken

  • If using fresh broccoli, steam until crisp tender. If using frozen broccoli, cook according to package directions. Place prepared broccoli in the bottom of the baking dish. Lightly season broccoli with seasoning salt. Scatter chicken dices evenly over top of broccoli.

For the Sauce

  • In a medium sized bowl, mix together the soups, mayonnaise, and lemon juice.  Stir in the cheese. Spread sauce mixture evenly over the chicken.

For the Topping

  • Mix together the breadcrumbs and melted butter. Sprinkle evenly over the sauce. Bake for 30-45 minutes in a 375℉ oven until hot and bubbly.
  • Suggested: Serve with a salad and rolls.
