Blueberry-Mint Salsa

This is a fun change from a tomato-based salsa. The flavor of sweet blueberries marries well with onion, jalapeno, and under-ripe chopped tomatoes. The mint offers a cooling accent and more interest.

Ingredients

  • 3 cups blueberries
  • 1 medium slightly under-ripe tomato, diced
  • 1/2 cup purple onion, small dice
  • 1/2 - 1 jalapeno pepper, seeded and minced 1/2 or whole per personal preference
  • 2-3 fresh mint leaves, chopped
  • 1 tablespoon rice vinegar or can use lime juice
  • 2 teaspoons sugar
  • 1/2 - 1 teaspoon salt

Instructions

  • Rough chop about half of the blueberries and leave the other half whole.
  • Add all ingredients to a medium-sized bowl. Stir together. Taste and adjust seasonings as necessary. Cover bowl, and put in the refrigerator for several hours to allow the flavors to blend.
