Berry-Mint Sippers

Use this berry-mint simple syrup infusion as a mixer with club soda for the ultimate refreshing summer drink.

Ingredients

  • 2 cups water
  • 2 cups white sugar
  • 2 cups berries of choice (I chose a mixture of blueberries, blackberries and strawberries)
  • 2 sprigs fresh mint
  • club soda, 1 cup for each serving
  • ice

Instructions

  • In a 2 quart saucepot stir together sugar and water. Bring to a low boil over medium heat until sugar has dissolved.
  • Mash berries somewhat, just enough to break them open. Add the mashed berries and fresh mint sprigs to the sugar/water mixture. Stir briefly and return to mixture to a low boil. Cook for 1 minute. Turn off heat and cover pot. Allow mixture to steep for several hours at room temperature.
  • Remove berries and mint sprigs. Strain syrup through a mesh sieve into a glass bottle or other suitable container. Cover and refrigerate for up to two weeks.

To use syrup:

  • For each serving, mix 3-4 tablespoons syrup to 1 cup of club soda.

Notes

A single type of berry or any mixture of berries can be used in this recipe. The proportions for the recipe are 1:1:1:1--1 cup sugar:1 cup water:1 cup berries:1 sprig of mint. The syrup may be frozen for at least 3 months.
