French Breakfast Muffins

Ingredients

For the muffins:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon nutmeg
  • 1/3 cup melted butter
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 cup milk

For the Topping:

  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 cup butter, melted

Instructions

  • Preheat oven to 350-degrees F. Spray muffin pan with non-stick cooking spray or use muffin papers.

For the muffins:

  • In a large bowl, sift together the flour, baking powder, and nutmeg. Set aside.
  • In a medium bowl, mix together the the melted butter, white sugar, egg, and milk. 
  • Add the wet ingredients to the dry ingredients. Stir just until combined.
  • Spoon batter into muffin tin or muffin papers, about 3/4 full. Bake for 20-25 minutes, or until muffins just start to turn golden at the edges.

For the topping:

  • Mix sugar and cinnamon together in a small bowl. Set aside.
  • In a separate small bowl, place the melted butter. Dip the tops of the warm muffins in the melted butter, then in the cinnamon sugar.
