Savory Mashed Potatoes {Slow Cooker}

Savory Mashed Potatoes {Slow Cooker}

I love making mashed potatoes in the slow cooker! It is one pot cooking for a really great side. Plus, you can make the potatoes and keep them warm for quite a while. Making potatoes this way works especially well for feeding a crowd.

As I’ve mentioned in a previous post, I have two slow cookers. I made Pork Chops with Dressing and Creamy Gravy in one slow cooker and these Savory Mashed Potatoes in the other slow cooker. Everything was ready at about the same time and dinner came together very easily. With the addition of a nice tossed salad, I had a complete meal all ready to go with very little stress at the last minute.

These potatoes are so flavorful with sharp cheddar cheese, sour cream, smoked paprika (GO GET THIS), and, of course, our friend sea salt. Really and truly, if you have never tried smoked paprika, you are missing something wonderful. Regular paprika is not even on the radar anymore for me…well, hardly ever.

Savory Mashed Potatoes {Slow Cooker}

Use your slow cooker to cook potatoes for mashed potatoes. So easy!

Ingredients

  • 5 pounds potatoes (use a dryer potato such as russet or Norkotah)
  • 1 tablespoon salt or to taste
  • 4 ounces (weight) sharp cheddar cheese, grated
  • 1 cup sour cream (low fat is fine)
  • 1/2-1 teaspoon smoked paprika

Instructions

  • Peel potatoes. Cut in half lengthwise; then crosswise into thick chunks. You don't want small pieces because they will cook into a watery mush.
  • Add the salt. Then add enough water to nearly cover the potatoes.
  • Cover and cook on high about 4 hours or until potatoes are easily pierced with a fork.
  • Drain the potatoes well. Keep them in the slow cooker for the remainder of the prep.
  • Mash the potatoes using an electric hand mixer or with a traditional potato masher.
  • Add the cheese and mix well with the hand mixer or potato masher. Since the potatoes are hot, most of the cheese will melt. YUM!
  • Add the sour cream and the paprika. Start out with the smaller amount of the smoked paprika, then taste. Correct seasonings and add-ins to taste. If the potatoes are too thick for your personal preference, thin them with a small amount of warmed milk.
  • The potatoes can be kept warm in the slow cooker with the slow cooker on low until ready to serve.
