Cake Batter Crispy Rice Cereal Treats

What I’ve been doing instead of blogging:

  1. working
  2. recovering from working
  3. taking my mom to the doctor
  4. recovering from taking my mom to the doctor
  5. changing dressings on my daughter’s finger or talking to my daughter about her finger or just looking at my daughter’s finger while she changes the dressing or helping my daughter out in other ways while she recovers from having severed one of her fingers (3 rounds of antibiotics can really slay your gastrointestinal tract)
  6. babysitting for the grandkaddidles
  7. thinking how smart God is about his timing when he stops a woman’s uterus and ovaries from working
  8. watching sappy Hallmark love movies with my husband (he’s very sure of himself, so he can totally immerse himself in chick flick stuff, even gets teary-eyed at the right places)
  9. sleeping
  10. hanging out on pinterest when I ought to have been sleeping
  11. cleaning out my kitchen (yay me!–HUGE undertaking–the thrift store is about to get the mother load of kitchen goodies)
  12. thinking about cooking
  13. thinking about ordering out
  14. wishing I had a new kitchen
  15. wishing I had a new bed
  16. wishing I was 25 years younger or at least that my back was 25 years younger or that I had a new bed
  17. making flop after flop of unbloggable AND inedible food–so depressing
  18. feeling guilty over everything (see above list including the not blogging part)–I feel so guilty most of the time that I even feel guilty about my guilt

So, moving forward…or sideways–

Most of my family were together Sunday night (except for my son who moved to North Dakota on Sunday–it’s a bittersweet kind of thing). Anyway, while they were all whooping it up playing “guitar hero”, I decided to give these cake batter crispy rice cereal treats a try. I joined the fam in spirit and background vocals from the kitchen. I mean, I would have joined them in the family room, but I was not up for getting my ego busted…I sing mostly off key, and my hand/eye coordination stinks so I couldn’t have followed the guitar or drum stuff very easily. I’m relatively certain that I would have looked like I was playing Twister. So, I opted to stay in the kitchen and experiment with a recipe for cake batter crispy rice cereal treats.

Cake batter anything is all the rage right now, (cake batter pudding cookies, cake batter ice cream, cake batter caramel popcorn) but I suspect you already know this. I realize that I am late to the party. No excuses, just late. My brain tends to run in different circles and I typically avoid trying to jump on ‘the latest craze’. I learned long ago (in the 5th grade), that I am generally out of step with the latest whatever, so I finally gave up trying.

For the sake of family harmony, aka not playing guitar hero, I made treats. The treats passed muster once I could break through the bedlam and get people to pull themselves away from Beatles music.

The recipe here was inspired by several different recipes and as usual, I took the best bits from each recipe and put them together to form sort of my own recipe. To me, it has the right amount of cake batter taste and the sprinkles add a whole lot of color and fun.

Cake Batter Crispy Rice Cereal Treats

Traditional Rice Krispie Treats are kicked up a notch with the addition of powdered cake mix and sprinkles!
Servings: 15

Ingredients

  • 3/4 cup dry cake mix (recommended: Pillsbury Funfetti cake mix or yellow cake mix)
  • 6 tablespoons butter
  • 1 10 ounce bag miniature marshmallows
  • 5 cups crispy rice cereal
  • 6 tablespoons sprinkles, divided (jimmies or confetti: see notes in step #6)

Instructions

  • Butter a 9" x 13" baking dish or pan. Set aside.
  • Lightly spoon cake mix into measuring cup. Sift into small bowl. Set aside.
  • Melt butter in a 4 quart sauce pot over medium heat.
  • Add marshmallows; cook and stir just until marshmallows are melted and smooth.
  • Add cake mix and stir until well blended. Turn off heat and add the crispy rice cereal. Stir until well blended. Work fast because the marshmallow mixture will start to stiffen very quickly.
  • Stir in 1/4 cup (4 tablespoons) sprinkles. Note: Do not add the sprinkles until after everything else has been mixed. If using 'jimmies', work quickly and stir just until incorporated. Jimmies melt easily. "Confetti" types of sprinkles hold up much better and will not melt.
  • Immediately put the cereal mixture into the buttered baking dish or pan. Press mixture in pan evenly. I usually lightly butter my hands and press the mixture around in the pan. Be careful because it is HOT. A lightly buttered large mixing spoon can also be used to spread the mixture.
  • Sprinkle the remaining 2 tablespoons of sprinkles over the top and gently press them against the marshmallow mixture. Just lightly pat them, you don't want to squish them.
  • Set aside to cool. Cut as desired.

    Terri, you know I love a good cake batter recipe!! Wow.. these look fantastic and I know my kids would love them. 🙂 I read your list… wow you have been a busy lady.       Ramona–These are definitely kid pleasing friendly. Plus, I saw a few adults around here gobbling down more cookies than the grandchildren. Makes you go hmmm….

    LOL! Twister. That’s too funny. I’m lovin’ all the cake/sprinkles recipes!! Yum! Bummer about the flops . . . I hate when that happens. If you’re like me, your kitchen confidence plummets and you walk away with a tub of Ben & Jerry’s for some comfort. You rebound nicely, I must say. These recipes and photos are fab!!       Yes, plummeting confidence. Ben and Jerry’s would be a nice idea, but I usually curl up with a spoon and a whole carton of Tillamook ice cream. Serious cravings! I worked my way through half of a 2 quart carton of it last night. Didn’t even feel any shame, either.
