Pineapple Salsa

Pineapple SalsaOh goodness, this is a pretty salsa.  Plus, it tastes really great.  It was the perfect accompaniment for grilled lemon shrimp.  It would also be a nice salsa for fish tacos.  I need to make some of those some time.  I’ll have to get back to you later on that one.

I made this salsa with fresh pineapple that I grilled on top of the stove in a little grill pan. (See end of post for “how-to” instructions.)  Canned pineapple would probably work well, too.  Get a can of the good stuff, though.  Grilling isn’t required for the pineapple, but it adds a nice smoky kind of flavor.

  • 1 whole pineapple, cut into cubes or two cans pineapple tidbits (rings if you plan to grill the pineapple)
  • 1 small purple onion, finely diced
  • 1 red pepper, diced
  • juice of 1 lime
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/2 teaspoon chipotle chili powder

Combine all ingredients.  Serve at room temperature or chill and then serve.

*Grilling Fresh Pineapple:  I have a pineapple tool that I bought when we lived in Texas.  I first saw this type of tool used at an open air market by the man from whom I bought my produce.  Of course I had to have one!  It has become one of my favorite kitchen tools.  However, if you don’t have one of these tools, just prep your pineapple in whatever way suits you.  I like to use pineapple rings.

To grill pineapple, brush it first with some canola oil then place on a hot grill pan or on your outdoor grill.  Cook until you see some caramel colored char marks and then turn to cook the other side.  Watch carefully because it cooks fast.  Remember, you want caramelized marks, not black marks. Remove from heat and allow to cool.  Cut into bite-sized pieces for the salsa.

Update:  I was in one of my local grocery stores yesterday and they had pineapple cutting tools sitting by the pineapple.  Check your grocery store for a similar product.  Otherwise you can find them at Bed, Bath, and Beyond or google “pineapple cutting tool” and purchase one on the internet.  There are metal cutting tools available now, too.
